I LOVE a good breakfast, and if Charlie isn’t making eggs or pancakes (see his Easter Bunny pancakes here!) then I am usually making waffles with our waffle iron. We have a Waring double iron which I absolutely love because it heats quickly, cooks evenly, and cranks out two waffles at a time! Here is my recipe for about 5-6 crispy, yet fluffy perfect Belgian waffles:
2 cups of flour
1⁄4 cup of sugar (I usually do a heaping cup)
4 teaspoons of baking powder
1⁄2 teaspoon of salt
Pinch (roughly 1/8 teaspoon) of cinnamon
1⁄2 cup of vegetable or canola oil
2 cups of milk
2 teaspoons of vanilla
Stir together the dry ingredients (flour, sugar, baking powder, salt, cinnamon).
In a separate bowl, separate the egg whites and beat them on high with a hand mixer until stiff peaks begin to form.
In a third bowl, mix together the remaining ingredients (egg yolks, oil, milk, and vanilla).
Add the dry ingredients to the wet ingredients and mix thoroughly.
Fold in the egg whites.
Spray your waffle iron with Pam cooking spray (I do this between every waffle I make).
Add batter to your waffle iron and cook until golden brown.
I like to top my waffles with blueberries, strawberries, blackberries, raspberries, some powdered sugar and a dollop of whipped cream. 😋
